I · The story
Astigar
noun, Basque — the maple
Astigarraga means “the place of maples”. It is also the town at the heart of Basque cider, where farmhouse cider houses still open their barrels each winter for txotx.
Aitor carries the name, the maple leaf and the drink to Amsterdam. He chooses each bottle from Basque producers and delivers it himself, with advice on how to pour it and what to eat with it.
Natural cider
Sagardo naturala: still and dry, with no added sugar or carbonation. Poured from a height to wake it up.
Basque producers
Cider houses and txakoli wineries from the Basque Country, chosen bottle by bottle.
